Ingredients
  

Salad

  • 3 cups spring mix or arugula
  • 1 cup radicchio chopped
  • 1 cup fennel thinly sliced
  • 1 cup cucumber partially peeled and diced
  • 2 oranges peeled and cut into 1-inch pieces
  • 1 cup cranberries
  • 1 avocado cubed
  • 1 cup walnuts chopped
  • ¾ cup feta or goat cheese crumbles

Orange Poppy Vinaigrette

  • 3 tbsp extra virgin olive oil
  • 2 tbsp apple cider vinegar
  • Juice of 1 orange
  • 1 tbsp honey
  • 1 tsp minced garlic
  • 1 tsp minced ginger
  • 1 tbsp poppy seeds
  • ½ tsp salt
  • ½ tsp ground black pepper

Instructions
 

  • Add all salad ingredients to a large bowl, and set aside.
  • Add all dressing ingredients to a mason jar, close tightly, and shake well.
  • Pour over salad, and toss well to combine.
