Equipment

  • large skillet
  • Measuring spoons
  • Citrus Juicer
  • Grater
  • small bowl
  • garlic press

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1½ cups uncooked orzo pasta
  • 3 cloves garlic finely minced
  • 2½ cups low-sodium vegetable broth
  • 2 cups broccoli florets chopped small
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • ⅓ cup unsweetened coconut milk
  • 2 tablespoons grated Parmesan optional or use plant-based Parmesan
  • 2 tablespoons fresh parsley chopped
  • Juice of 1 lemon
  • Optional: pinch of red pepper flakes

Instructions

  • Heat olive oil in a large skillet over medium heat.
  • Add the orzo and garlic. Toast for 1–2 minutes, stirring often, until lightly golden and fragrant.
  • Stir in the vegetable broth, broccoli, salt, and black pepper.
  • Bring to a gentle boil, then reduce heat to medium-low. Cover and simmer for about 10–12 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.
  • If the liquid cooks down too quickly, add an extra splash of broth as needed.
  • Stir in the coconut milk, Parmesan, parsley, and fresh lemon juice.
  • Taste and adjust seasoning as desired. Add red pepper flakes for a little heat if preferred.
  • Serve warm and garnish with fresh parsley or lemon zest.
