Slice red onion and soak in cold water (to remove bitterness)
Drain and rinse chickpeas, season with 1 tsp of salt, pepper, smoked paprika, garlic powder, oregano, cumin powder and chilli powder. Bake on 375 for 15-20 minutes or until crispy.
In a bowl, add crispy chickpeas, cucumbers, sliced avocado, onion and fresh coriander and make the below dressing and drizzle over.
Add Feta and mix well. Eat alone or mix well.
Banging dressing
A handful fresh coriander, 1 lime, 1 spring onion, green chilli pepper, 1/4 olive oil. Season with salt and pepper.
