1/2mediumred onion peeled and sliced

Instructions
Bring a pot of 4-6 cups of water to a boil.
Mix in a bowl the ¼ cup of olive oil, juice of one lemon, 2 cloves of garlic and salt and pepper to taste. Set aside and marinate.
Prep veggies: Slice red onions , chop cilantro , cut broccoli into bite sized florets
Once water is boiling add broccoli bites and boil for 2 minutes. Drain broccoli and add to a cold-water bath for 2 minutes to chill broccoli.
Place a large skillet over medium heat with 2 teaspoons olive oil. Heat until the oil is shimmering. Add corn. Cook until the corn is beginning to turn golden. Remove from heat & remove from husk.
In a large boil, add broccoli, corn, red onions, cilantro, dressing, salt and pepper for taste.
