Salad

spring mix or arugula

radicchio
chopped

cup
fennel
thinly sliced

cucumber
partially peeled and diced

oranges
peeled and cut into 1-inch pieces

cranberries
1
avocado
cubed
1
cup
walnuts
chopped
¾
cup
feta or goat cheese crumbles
Orange Poppy Vinaigrette

tbsp
extra virgin olive oil

tbsp
apple cider vinegar
Juice of 1 orange

tbsp
honey
1
tsp
minced garlic
1
tsp
minced ginger

tbsp
poppy seeds

salt

ground black pepper
Instructions
Add all salad ingredients to a large bowl, and set aside.
Add all dressing ingredients to a mason jar, close tightly, and shake well.
Pour over salad, and toss well to combine.
