Preheat Oven2. Toss the sweet potato in olive oil , salt & pepper . Bake @425 for 25-30 minutes , until cooked till liking .3. Massage the kale with a couple tablespoons of olive oil4. Add Tahini , lemon juice, maple , syrup , dijon mustard , salt & pepper in a jar Shake / Mix Well 5. Assemble the salad, drizzle the dressing on top & toss to coat .
