Combine the quinoa and water in a medium pot. Bring to a boil, cover, and reduce the heat. Simmer for 15 minutes.The basic ratio is 1 cup quinoa to 2 cups liquid. You can use water (season it with a bit of kosher salt), or you can use any kind of broth (we like to use low-sodium broths and add any extra salt to the finished dish as needed).
Remove the pot from the heat and let it sit, covered, for 10 minutes more.
Then, remove the lid and fluff with a fork!
Combine all salad ingredients. Combine dressing ingredients, mix well. Dress before serving & Enjoy !
