Instructions
Using a large sharp knife, slice the sweet potato lengthwise down the middle. With a steady hand, make 4-5 thin slices about 1/4″-1/3″ thick from the middle of the sweet potato. You can keep the skin or discard.
In a cast iron skillet on medium high heat, add your sweet potato slices with ¼ cup of water to steam. Once liquid has evaporated and sweet potatoes have softened, removed sweet potatoes add 2-3 tbsp of neutral oil and sear on both sides
While sweet potatoes are steaming , mash avocado, add cilantro or parsley and seasonings: salt, pepper, lemon juice, with a drizzle of olive oil.
To assemble : Let sweet potatoes cool and top with avocado dip, micro-greens, and additional toppings.
