Transfer the squeezed zucchini into a mixing bowl. Add the diced carrots, chopped spring onion, flour, starch, parsley, salt, pepper, garlic powder, and ground cumin.
Mix all the ingredients together until well combined. Knead the mixture for a few minutes to ensure everything is evenly distributed.
Once the mixture is ready, form it into falafel or balls of desired size.
Preheat your air fryer or oven to 390°F.
If using an air fryer, place the falafel or balls into the air fryer basket, making sure they are not overcrowded. Cook for 10-15 minutes, or until they are golden brown and crispy on the outside.
