Fresh and Fruity Spring-Summer Salad

Equipment

  • Strainer
  • Mixing bowl/ mason jar
  • salad bowl

Ingredients
  

  • 4 cups Baby Spinach
  • 1 cup Strawberries
  • 1 cup Blueberries
  • 1 Avocado diced
  • ½ cup Cucumber thinly sliced
  • ¼ cup Red Onion thinly sliced
  • ¼ cup Toasted Walnuts

Dressing

  • ¼ cup Extra Virgin Olive Oil
  • 2 tbsp Apple Cider Vinegar
  • 1 tsp Honey
  • 1 tsp Dijon Mustard
  • 1 clove Garlic minced
  • Salt & Pepper to taste

Instructions
 

  • In a large salad bowl, combine the baby spinach, strawberries, blueberries, avocado, cucumber, and red onion.
  • Toss gently to mix the ingredients together.
  •  In a small bowl or a jar with a lid, combine the olive oil, apple cider vinegar, honey, Dijon mustard, and minced garlic.
  • Whisk (or shake if using a jar) until the dressing is well combined and emulsified. Season with salt and pepper to taste.
  • Pour the dressing over the salad and toss gently to coat all the ingredients with the dressing. Sprinkle the toasted walnuts on top for a crunchy finish.
  • Divide the salad into four servings. Enjoy immediately as a refreshing, nutrient-packed meal.
