Fresh and Fruity Spring-Summer Salad
This salad combines fresh vegetables and fruits that are in season during this time, providing a delicious mix of flavors and nutrients.

Ingredients
- 4 cups Baby Spinach
- 1 cup Strawberries
- 1 cup Blueberries
- 1 Avocado diced
- ½ cup Cucumber thinly sliced
- ¼ cup Red Onion thinly sliced
- ¼ cup Toasted Walnuts
Dressing
- ¼ cup Extra Virgin Olive Oil
- 2 tbsp Apple Cider Vinegar
- 1 tsp Honey
- 1 tsp Dijon Mustard
- 1 clove Garlic minced
- Salt & Pepper to taste
Instructions
- In a large salad bowl, combine the baby spinach, strawberries, blueberries, avocado, cucumber, and red onion.
- Toss gently to mix the ingredients together.
- In a small bowl or a jar with a lid, combine the olive oil, apple cider vinegar, honey, Dijon mustard, and minced garlic.
- Whisk (or shake if using a jar) until the dressing is well combined and emulsified. Season with salt and pepper to taste.
- Pour the dressing over the salad and toss gently to coat all the ingredients with the dressing. Sprinkle the toasted walnuts on top for a crunchy finish.
- Divide the salad into four servings. Enjoy immediately as a refreshing, nutrient-packed meal.
