Equipment

  • Blender/ Hand immersion
  • Pot / Dutch Oven

Ingredients
  

  • 1 tbsp Olive Oil
  • 1 Red Onion
  • 6 cloves Garlic
  • 3 tbsp Red Curry Paste
  • 2 Sweet Potatoes
  • 2 cups Uncooked lentils
  • 2 big Tomatoes
  • 1 can Coconut milk
  • 4 cups Vegetable broth
  • handful Kaffir Lime Leaves Optional

Instructions
 

  • Sauté your onion and garlic until translucent.
  • Add chopped sweet potato, red curry paste, coconut milk, chopped tomatoes, uncooked lentils, vegetable broth.
  • Simmer for 20 minutes or until the lentils and sweet potato is tender.
  • Blend until smooth.
  • Add the lime leaves and more seasoning if necessary. Let simmer for 10 minutes.

Notes

Divide into freezer friendly containers and keep in you fridge for whenever you are hungry!
(Do not eat the lime leaves, remove them before eating)

    For this recipe, I left the lentils, sweet potatoes, onion, and tomato without blending because I am not a fan of soup blend, and it was delicious also without blending.
