Ingredients
  

  • 1 Bunch Collard Greens de-stemmed and thinly sliced
  • 2 Cups Shredded Cabbage shredded
  • 2 Large Carrots peeled and julienned
  • 1 Apple cored and julienned
  • 1 Large Radish (3 small) julienned
  • 4 Green Onions sliced
  • 1/2 Cup Dried Cranberries
  • 1/3 Cup Sesame Seeds
  • Salt & Pepper
  • 1/4 Cup Tahini
  • 1 Tsp Dijon Mustard
  • 1/4 Cup Apple Cider Vinegar
  • 1 Tbsp Honey
  • 1 Pinch Salt
  • 3 Tbsp Water depending on desired consistency

Instructions
 

  • In a large mixing bowl, combine prepared vegetables.
  • In a bowl or small food processor, blend together dressing ingredients until well combined. Adjust amounts of ingredients to suit your taste - add a couple tablespoons of water if the dressing is too thick (but it should not be too liquid, either).
  • Slowly add in the dressing and toss until the mixture is evenly coated.
  • If you have time, let the salad sit in the fridge for a couple of hours before serving.
