Chili Lime Watermelon Salad
A burst of flavor hydration in every bite!
Equipment
- Salad bowl/ large bowl
- chopping board
- small bowl/ mason jar
Ingredients
- 1 seedless watermelon cut into ½-1 inch cubes
- 1 large cucumber diced
- 1 jalapeno diced, deseeded
- juice of a lime
- ½ cup pumpkin seeds
- 1 large bunch of mint thinly sliced
- 1 bunch cilantro chopped
- 1 large shallot thinly sliced into rings
- Chili lime seasoning OR Tajin sub chili powder and lime zest if you can’t find either
- 6 oz block of feta
- kosher salt IF NEEDED
Instructions
- Combine all ingredients in a bowl.
- Season with salt and chili lime seasoning to taste.
- Don’t add the salt until after you add the feta (feta is already salty as it is).
