Chili Lime Watermelon Salad

Equipment

  • Salad bowl/ large bowl
  • chopping board
  • small bowl/ mason jar

Ingredients
  

  • 1 seedless watermelon cut into ½-1 inch cubes
  • 1 large cucumber diced
  • 1 jalapeno diced, deseeded
  • juice of a lime
  • ½ cup pumpkin seeds
  • 1 large bunch of mint thinly sliced
  • 1 bunch cilantro chopped
  • 1 large shallot thinly sliced into rings
  • Chili lime seasoning OR Tajin sub chili powder and lime zest if you can’t find either
  • 6 oz block of feta
  • kosher salt IF NEEDED

Instructions
 

  • Combine all ingredients in a bowl.
  • Season with salt and chili lime seasoning to taste.
  • Don’t add the salt until after you add the feta (feta is already salty as it is).
