Ingredients
  

  • 1 Large Zucchini
  • 1 Cup Flour
  • 1 Tsp Baking Soda
  • 3/4 Cup Water
  • 3-4 Vine Tomatoes
  • 3 Cloves Garlic
  • 1 Shallot
  • 1 Tbsp White Wine Vinegar
  • 1 Tsp Sugar
  • 1 Lemon
  • Fresh Basil
  • Salt & Pepper to taste
  • Neutral Oil for frying

Instructions
 

  • Begin by sautéing shallots, tomatoes, and garlic in a bit of oil. Once the tomatoes develop blisters, gently crush them and then lower the heat. Incorporate vinegar, salt, and sugar, allowing the mixture to simmer until it reduces.
  • Cut the zucchini into strips and season the flesh with salt. Combine flour, baking soda, and water until a batter forms.
  • Dry the courgette slices, dip them in the batter, and shallow fry in oil for about a minute or two on each side until they turn golden and achieve a crispy texture.
  • Present your tomato relish on a plate, place the courgette fritti on top, and garnish with fresh basil, lemon, and a sprinkle of salt. Enjoy your flavorful dish!
