Equipment

Ingredients
  

  • 1 Cup Quinoa
  • 1 Cup Steamed Broccoli florets
  • 1/2 Can Roasted Chickpeas seasoned with a pinch of salt, cumin, and smoked paprika
  • 1/2 Cucumber Sliced
  • 1 cup Seaweed Salad or any Salad Spinach, Kale, or Arugula

Green Tahini Dressing

  • 2 Tbsp Tahini
  • 1/4 Cup Fresh Parsley Chopped
  • 1/4 Cup Cilantro Chopped
  • 1 Clove Garlic Minced
  • Juice of a Lime
  • 1-2 Tbsp Water To thin to desired consistency
  • 1/2 Tsp Sea Salt
  • 1/4 Tsp Black Pepper
  • 1/2 Tsp Maple Syrup or Honey

Instructions
 

Prepare the Quinoa

  • Rinse ½ cup uncooked quinoa under cold water to remove bitterness.
  • In a saucepan, combine quinoa with 1 cup water and a pinch of salt.
  • Bring to a boil, then reduce heat to low, cover, and simmer for 12–15 minutes, until the water is absorbed.
  • Fluff with a fork and set aside.

Roast the Chickpeas

  • Preheat the oven to 400°F (200°C).
  • Drain and rinse ½ cup canned chickpeas, then pat dry with a paper towel.
  • Toss chickpeas with ½ tsp olive oil, ¼ tsp salt, ¼ tsp cumin, and ¼ tsp smoked paprika.
  • Spread on a baking sheet and roast for 20–25 minutes, shaking halfway through, until crispy.

Steam the Broccoli

  • Bring a small pot of water to a boil. Place a steamer basket over it and add 1 cup broccoli florets.
  • Cover and steam for 5–7 minutes until tender but still vibrant green.
  • Remove from heat and set aside.

Make the Green Tahini Dressing

  • In a blender or food processor, combine tahini, parsley, cilantro, garlic, lime juice, water, salt, pepper, and maple syrup (if using).
  • Blend until smooth and creamy. Adjust thickness by adding more water if needed.

Assemble the Bowl

  • In a large bowl, layer the cooked quinoa, steamed broccoli, roasted chickpeas, and mixed greens.
  • Add sliced cucumber and top with seaweed salad or salad of your choice.
  • Drizzle generously with the Green Tahini Dressing.

Serve & Enjoy

  • Mix well to combine flavors, or leave as is for a visually appealing meal.
  • Enjoy immediately for a fresh and detoxifying lunch!
