Preheat oven to 425. Place a sheet pan in the oven for 15 minutes to get it hot .
Slice 4 small zucchini in half lengthwise , then score the tops of the zucchini , and slice into thirds .
Toss with olive oil, salt , dried oregano, dried dill , sesame seeds , and red pepper flakes . Place face down on the hot sheet pan . Roast for 20 minutes then flip and roast for another 10 or until your liking .
Make the crumble - chop up pistachios , feta cheese , basil , lemon zest , salt and pepper . Add each ingredient one at a a : time and chop until it creates a nice crumble .
