- 2 cups Sweet Potatoes diced
- 2 cups Beets diced
- 1 cup Baby Carrots
- 2 tbsp Olive Oil
- 1 tsp Ground Turmeric
- 1 Lemon juice
- 1 tsp Thyme Leaves
Preheat oven to 400°F
Toss vegetables with olive oil, turmeric, lemon juice, and thyme.
Spread evenly on a baking sheet and roast for 30-35 minutes, stirring halfway.
