A tasty vegan soba noodle salad with spicy Thai-inspired peanut sauce dressing is a wonderful and healthy way to eat the rainbow! This recipe is customizable to use whatever veggies you have on hand.
Optional:1 jalapeño, 1/4 cup coconut milk, sriracha sauce
Instructions
1.) Cook the noodles according to the package directions, they cook differently than pasta so make sure to read the instructions! Run under cool water, drain, and set aside. 2.) Prep the vegetables for your salad by cutting or shredding. If you want to make a rainbow in your bowl, separate vegetables by color, if you want to minimize dishes, mix veggies into one bowl. 3.) Chop green onions and herbs, set aside in a bowl to use as toppings.4.) Make your sauce! In a small sauce pan, heat up some neutral oil, add ginger and garlic and cook on medium heat until soft, about 3 minutes. Add in peanut butter, sugar, lime juice, soy sauce, and optional ingredients. Stir until warm and combined, about 2-3 minutes.5.) Remove from heat and blend with a hand blender, in a food processor, or with a standing blender. If it looks too think, add some liquid, if it looks too thin, add some more peanut butter. 6.) Assemble your salad: in a bowl, place noodles at the bottom and arrange vegetable on top in a rainbow, drizzle with peanut sauce, and sprinkle herbs on top!
