Wash, drain, and dry all vegetables. To prepare chop: squash into cubes, finely chop: cilantro, mince: garlic and chipotle chiles & dice: onion and tomatoes. Remove corn kernels from cob.
Put the chopped ingredients aside.Then, put a saucepan on the stove on medium-high heat and add olive oil.
After 2 minutes of heating oil or until hot. Add the chopped garlic and onion. Stir for about 2 minutes, then add corn kernels and stir for 3 to 5 minutes.
Once cooked till liking add tomatoes and stir for an additional 2 minutes.
Next, add the squash stir and cover for about 10 minutes.
From there add your salt, oregano and chipotle chili. To finish, cut cheese into squares and add to the pan, a final touch of cilantro, cover it for another 5 minutes. And ready!
