Cabbage and Carrot Salad with Almond Butter Dressing and Fresh Herbs

Ingredients
- ¼ Red cabbage thinly sliced
- 1 Carrot shaved into strips
- ¼ cup Cilantro roughly chopped
- ¼ cup Basil roughly chopped
- 2 tsp Toasted sesame seeds
Almond Butter Dressing
- 1 tbsp Sesame oil
- 1 tbsp Soy sauce
- 2 tsp Honey
- ½ Lemon juice
- 1 tsp Almond butter
Instructions
- Whisk all the ingredients for the dressing and season with salt and pepper to taste.
- In a bowl, add the cabbage, carrots and herbs.
- Drizzle over the dressing and toss. Top with the sesame seeds and almonds and toss again before serving.
