Cilantro-Lime Pasta Salad

Ingredients
  

Salad

  • 8 oz bow-tie pasta cooked
  • cups corn cut off the cob
  • cups cherry tomatoes sliced
  • ½ cup red onion chopped
  • 2 tbsp cilantro chopped

Cilantro Lime Dressing

  • ½ cup plain greek yogurt
  • ¼ cup lime juice
  • ¼ cup cilantro
  • 2 cloves garlic
  • ½ tsp salt
  • ¼ tsp cayenne powder

Instructions
 

  • Bring 4 - 6 quarts of water to a rolling boil, add salt to taste. Add pasta contents of package to boiling water.
  • Return to a boil. For authentic "al dente" pasta, boil uncovered, stirring occasionally for 11 minutes.
  • Remove from heat. Drain. Set aside and let cool down.
  • Mix all dressing ingredients in a bowl and set aside.
  • Add all of your salad ingredients to a bowl & toss it with your desired amount of cilantro-lime dressing.
  • Keep it chilled in the fridge until you’re ready to eat!
