Equipment

  • Large bowl/ salad bowl
  • small bowl/ mason jar

Ingredients
  

  • 3 cups Watermelon diced
  • 1 cup Bell Pepper diced
  • Avocado diced
  • 1 cup Cucumber diced
  • 2-3 cups Arugula
  • 1 Serrano pepper sliced thin

Ginger Sesame Vinaigrette

  • 1 tbsp Fresh ginger minced
  • 2 tbsp Lime juice
  • 2 tbsp Tamari or soy sauce
  • 1 tsp Toasted sesame oil
  • 1 tsp Sesame seeds
  • cup Avocado oil
  • ½ tsp Salt
  • ¼ tsp Ground black pepper

Instructions
 

  • Add salad ingredients to a large bowl.
  • In a small bowl combine the ginger, lime juice, tamari, sesame oil, avocado oil, salt and pepper.
  • Mix well and pour the dressing over the salad.
  • Toss to combine.
  • Sprinkle with sesame seeds.
  • Serve chilled and enjoy!
