Sweet Potato Avaocado Toast

Equipment

  • Cast Iron/ skillet
  • Small mixing bowl

Ingredients
  

  • 1 Sweet Potato
  • 1 Avocado
  • 1 handful Cilantro or Parsley
  • 1 juice Lemon
  • Salt & Pepper to taste
  • 2-3 tbsp Neutral oil
  • 2 tbsp Olive oil
  • 1 handful Micro-greens or Arugula
  • Additional toppings Everything but the bagel seasoning, chili crisp or other preferred toppings
  • 1/4 cup water

Instructions
 

  • Using a large sharp knife, slice the sweet potato lengthwise down the middle. With a steady hand, make 4-5 thin slices about 1/4″-1/3″ thick from the middle of the sweet potato. You can keep the skin or discard.
  • In a cast iron skillet on medium high heat, add your sweet potato slices with ¼ cup of water to steam. Once liquid has evaporated and sweet potatoes have softened, removed sweet potatoes add 2-3 tbsp of neutral oil and sear on both sides
  • While sweet potatoes are steaming , mash avocado, add cilantro or parsley and seasonings: salt, pepper, lemon juice, with a drizzle of olive oil.
  • To assemble : Let sweet potatoes cool and top with avocado dip, micro-greens, and additional toppings.
