Equipment

  • parchment paper

Ingredients
  

  • 1 Avocado Thinly sliced
  • 1/2 Red Onion Thinly sliced
  • 1 can Chickpeas
  • 2.5 tbsp Olive Oil
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Smoked Paprika
  • 1 tsp Garlic Powder
  • 1 tsp Oregano
  • 1 tsp Cumin Powder
  • 1 tsp Chili Powder
  • 1/4 Cucumber
  • topping Feta Optional
  • 2 cups Fresh Cilantro
  • 2 Limes
  • 1/2 tsp Salt & Pepper
  • 1 Spring Onion
  • Green Chilli Pepper
  • 1/4 cup Olive Oil
  • Salt & Pepper to taste

Instructions
 

  • Slice red onion and soak in cold water (to remove bitterness)
  • Drain and rinse chickpeas, season with 1 tsp of salt, pepper, smoked paprika, garlic powder, oregano, cumin powder and chilli powder. Bake on 375 for 15-20 minutes or until crispy.
  • In a bowl, add crispy chickpeas, cucumbers, sliced avocado, onion and fresh coriander and make the below dressing and drizzle over.
  • Add Feta and mix well. Eat alone or mix well.

Banging dressing

  • A handful fresh coriander, 1 lime, 1 spring onion, green chilli pepper, 1/4 olive oil. Season with salt and pepper.

    I made the recipe, and for the dressing, because there are no instructions on there, I blended half of the spring onion, some cilantro, and lemon with the olive oil, salt, and pepper, and it was delicious! I love it!
