
Broccoli Salad
A simple, classic Broccoli Salad recipe that serves as a great fast side dish for any occasion
Ingredients
Dressing
- 1/4 cup olive oil
- 2 cloves garlic
- 1 lemon juiced
- salt & pepper to taste to taste
Salad
- 1 tsp olive oil (cooking corn)
- 2 medium heads of broccoli cut into bite size florets
- 1/2 medium red onion peeled and sliced
- 1/4 cup cilantro chopped
- 1 ear corn shucked & kernels removed
Instructions
- Bring a pot of 4-6 cups of water to a boil.
- Mix in a bowl the ¼ cup of olive oil, juice of one lemon, 2 cloves of garlic and salt and pepper to taste. Set aside and marinate.
- Prep veggies: Slice red onions , chop cilantro , cut broccoli into bite sized florets
- Once water is boiling add broccoli bites and boil for 2 minutes. Drain broccoli and add to a cold-water bath for 2 minutes to chill broccoli.
- Place a large skillet over medium heat with 2 teaspoons olive oil. Heat until the oil is shimmering. Add corn. Cook until the corn is beginning to turn golden. Remove from heat & remove from husk.
- In a large boil, add broccoli, corn, red onions, cilantro, dressing, salt and pepper for taste.
- Serve and eat!
