Crisp Roasted Zucchini with Feta, Basil & Pistachio Crumble

Ingredients
  

  • 4 small Zucchini
  • 2-3 tbsp olive oil
  • 3/4 tsp salt
  • 1 tbsp dried oregano
  • 1 1/2 tsp dried dill
  • 2 tbsp sesame seeds
  • 2 tbsp red pepper flakes

Crumble

  • 1/4 cup pistachios
  • 1/4 cup feta Chesse
  • 2 tbsp basil
  • 1/2 zest lemon
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • tahini optional

Instructions
 

  • Preheat oven to 425. Place a sheet pan in the oven for 15 minutes to get it hot .
  • Slice 4 small zucchini in half lengthwise , then score the tops of the zucchini , and slice into thirds .
  • Toss with olive oil, salt , dried oregano, dried dill , sesame seeds , and red pepper flakes . Place face down on the hot sheet pan . Roast for 20 minutes then flip and roast for another 10 or until your liking .
  • Make the crumble - chop up pistachios , feta cheese , basil , lemon zest , salt and pepper . Add each ingredient one at a a : time and chop until it creates a nice crumble .
  • Top zucchini with crumble and tahini (optional)
  • Enjoy !
