Ingredients
  

  • 1 medium sweet potato cubbed
  • 2 tbsp olive oil for sweet potatoes
  • salt & pepper to taste
  • 5 cups Kale
  • 1 apple chopped
  • 1/2 cup dried cranberries
  • 1/3 cup pumpkin seeds
  • 1/3 cup parmesan
  • 2 tbsp olive oil for salad
  • 1/2 cup walnuts OPTIONAL
  • 1/3 cup tahini
  • 1/4 cup lemon juice
  • 2 tbsp maple syrup
  • 2 tbsp dijon mustard
  • salt & pepper

Instructions
 

  • Preheat Oven
    2. Toss the sweet potato in olive oil , salt & pepper . Bake @425 for 25-30 minutes , until cooked till liking .
    3. Massage the kale with a couple tablespoons of olive oil
    4. Add Tahini , lemon juice, maple , syrup , dijon mustard , salt & pepper in a jar Shake / Mix Well
    5. Assemble the salad, drizzle the dressing on top & toss to coat .
