Equipment

Ingredients
  

  • 1 cup cooked quinoa
  • 1 cup chopped curly parsley
  • 1 cup chopped cilantro
  • 1 cup chopped mint
  • 1 cup chopped green onion
  • ½ small red onion thinly sliced
  • ½ cup chopped roasted salted pistachios
  • salt to taste

Dressing

  • ¼ cup olive oil
  • 1 tbsp balsamic
  • ½ tbsp honey
  • salt & pepper to taste

Instructions
 

  • Combine the quinoa and water in a medium pot. Bring to a boil, cover, and reduce the heat. Simmer for 15 minutes.
    The basic ratio is 1 cup quinoa to 2 cups liquid. You can use water (season it with a bit of kosher salt), or you can use any kind of broth (we like to use low-sodium broths and add any extra salt to the finished dish as needed).
  • Remove the pot from the heat and let it sit, covered, for 10 minutes more.
  • Then, remove the lid and fluff with a fork!
  • Combine all salad ingredients. Combine dressing ingredients, mix well. Dress before serving & Enjoy !
