Ingredients
  

  • 2 cups Sweet Potatoes diced
  • 2 cups Beets diced
  • 1 cup Baby Carrots
  • 2 tbsp Olive Oil
  • 1 tsp Ground Turmeric
  • 1 Lemon juice
  • 1 tsp Thyme Leaves

Instructions
 

  • Preheat oven to 400°F
  • Toss vegetables with olive oil, turmeric, lemon juice, and thyme.
  • Spread evenly on a baking sheet and roast for 30-35 minutes, stirring halfway.
  • Serve warm as a hearty detoxifying dish.
