Shaved Brussels Sprout Salad w/ Avocado and Lemon Vinaigrette

Ingredients
  

Salad

  • 20 brussels sprouts shaved
  • 1 avocado diced
  • 1 apple
  • 6 green onions diced
  • 1 cup fresh spinach
  • 1/3 cup parmesan cheese
  • 1/4 dried cranberries
  • 1/4 cup sliced almonds

Lemon Vinaigrette

  • 4 tbsp lemon juice
  • 1 tbsp dijon mustard
  • 1 tbsp dried oregano
  • 1 tbsp pepper
  • 1/2 tbsp salt
  • 4 tbsp olive oil

Instructions
 

  • Cooking Instructions 
    STEP 1
    Slice the stems off the Brussels sprouts and cut each one in half, then thinly slice. Transfer the shaved sprouts to a medium bowl and break apart with your hands.
    STEP 2
    To prepare the vinaigrette, juice the lemons into a small bowl and remove the seeds.
    STEP 3
    Add the mustard, oregano, pepper, and salt. Whisk to combine.
    STEP 4
    Slowly add the olive oil while continuing to whisk until evenly blended.
    STEP 5
    Slice the avocado and remove the pit, then dice.
    STEP 6
    Slice and dice apple.
    STEP 7
    Trim the ends of the scallions, then dice.
    STEP 8
    In a large bowl, combine the Brussels sprouts and spinach.
    STEP 9
    Add the avocado, apples, scallions, Parmesan cheese, cranberries, and almonds.
    STEP 10
    Pour the dressing evenly over the salad.
    STEP 11
    Toss thoroughly until well mixed. Enjoy!
