Add the sliced oyster mushrooms and red bell pepper to the baking sheet.
Roast in the preheated oven for 12-15 minutes, or until the bok choy is tender and slightly browned around the edges.
While the bok choy is roasting, prepare the sauce. In a mixing bowl, combine tahini, coconut aminos, dried cilantro, minced garlic, and crushed red pepper.
Once the bok choy is done, transfer it to a serving plate.
Drizzle the tahini sauce over the roasted bok choy and oyster mushrooms.
