Spiced Chili Garlic Oven-Roasted Bok Choy w/ Oyster Mushrooms

Ingredients
  

  • 2 Heads Bok Choy
  • 1 cup Oyster Mushrooms cleaned and sliced
  • 1 Red Bell Pepper sliced
  • 2 tbsp Olive Oil
  • 1 tsp Paprika
  • ½ tsp Turmeric
  • ¼ tsp Cayenne Pepper
  • ½ tsp Garlic Powder
  • ½ tsp Ground Ginger
  • ½ tsp Italian Seasoning
  • ½ tsp Curry Powder

For the Sauce

  • 2 tbsp Tahini
  • 2 tbsp Coconut Aminos
  • 1 tsp Dried Cilantro
  • 2 cloves Garlic mined
  • ¼ tsp Crushed Red Pepper

Instructions
 

  •  Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Cut the bok choy in half lengthwise and place them on the lined baking sheet.
  • In a small bowl, mix together olive oil, paprika, turmeric, cayenne pepper, crushed red pepper, garlic powder, ground ginger, Italian seasoning, curry powder, and a very light sprinkle of sea salt.
  • Drizzle the spice mixture over the bok choy halves, ensuring they are evenly coated.
  • Add the sliced oyster mushrooms and red bell pepper to the baking sheet.
  • Roast in the preheated oven for 12-15 minutes, or until the bok choy is tender and slightly browned around the edges.
  • While the bok choy is roasting, prepare the sauce. In a mixing bowl, combine tahini, coconut aminos, dried cilantro, minced garlic, and crushed red pepper.
  • Once the bok choy is done, transfer it to a serving plate.
  • Drizzle the tahini sauce over the roasted bok choy and oyster mushrooms.
