Equipment

  • Cloth for squeezing out liquid
  • Oven or air fryer
  • baking tray if using oven

Ingredients
  

  • 2 Zucchini
  • 1-2 Carrots finely diced
  • 1 cup Flour
  • 2 tbsp Starch
  • handful Parsley
  • 1 Spring onion finely chopped
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Garlic Powder
  • 1 tsp Ground Cumin

Instructions
 

  • Grate the zucchini and place it in a bowl. Add 1-2 teaspoons of salt to the grated zucchini. Mix well and set aside for 10 minutes to allow the salt to draw out excess moisture.
  • While the zucchini is resting, prepare the other ingredients: finely dice the carrots, chop the spring onion, and gather the flour, starch, parsley, salt, pepper, garlic powder, and ground cumin.
  • After 10 minutes, place the grated zucchini in a clean cloth or paper towel and squeeze out as much liquid as possible.
  • Transfer the squeezed zucchini into a mixing bowl. Add the diced carrots, chopped spring onion, flour, starch, parsley, salt, pepper, garlic powder, and ground cumin.
  • Mix all the ingredients together until well combined. Knead the mixture for a few minutes to ensure everything is evenly distributed.
  • Once the mixture is ready, form it into falafel or balls of desired size.
  • Preheat your air fryer or oven to 390°F.
  • If using an air fryer, place the falafel or balls into the air fryer basket, making sure they are not overcrowded. Cook for 10-15 minutes, or until they are golden brown and crispy on the outside.

  1. This recipe is delicious and I added some avocado spray oil to cook them also hummus that I made after and they were amazing!!!
